A simple and delicious side dish featuring zucchini coated in parmesan cheese and baked to perfection.

For the Crust:

  • 3 medium zucchinis, sliced into 1/4-inch rounds
  • 1/2 cup grated parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix parmesan cheese, breadcrumbs, garlic powder, oregano, and black pepper.
  3. Toss zucchini slices in olive oil, then coat them evenly with the parmesan mixture.
  4. Arrange zucchini slices in a single layer on the baking sheet.
  5. Bake for 20-25 minutes until golden and crispy. Serve warm.
