Ingredients
  

  • 4-6 small to medium-sized cucumbers, peeled and thinly sliced
  • 1/2 cup rice vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon grated ginger
  • 1 tablespoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup toasted sesame seeds

Instructions
 

  • In a large bowl, combine the sliced cucumbers and salt. Let it sit for 10-15 minutes to allow the cucumbers to release their excess water.
  • In a small bowl, whisk together the rice vinegar, soy sauce, honey, grated ginger, sesame oil, and red pepper flakes (if using).
  • After the cucumbers have sat for 10-15 minutes, drain off the excess water and add the cucumber slices to the bowl with the dressing.
  • Toss the cucumbers to coat them evenly with the dressing.
  • Sprinkle the chopped cilantro and toasted sesame seeds over the top of the cucumbers
  • Serve the salad chilled or at room temperature.
