Ingredients

  • 2 large apples, peeled and chopped
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying
  • Confectioners' sugar for dusting (optional)

Instructions

  • In a large bowl, combine the chopped apples, granulated sugar, flour, baking powder, and salt. Mix until the apples are evenly coated with the dry ingredients.
  • In a separate bowl, whisk together the melted butter, egg, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and mix until a dough forms.
  • Cover the dough and refrigerate for at least 30 minutes.
  • Heat the vegetable oil in a deep frying pan to 375°F (190°C).
  • Using a cookie scoop or a spoon, drop the dough into the hot oil, making sure not to overcrowd the pan.
  • Fry the fritters for 2-3 minutes on each side, or until they are golden brown and cooked through.
  • Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
  • Dust the fritters with confectioners' sugar (if desired) and serve warm.
