Start your day right with our quick and delicious Breakfast Wraps. Ready in just 10 minutes, these savory bundles combine fluffy scrambled eggs, crispy bacon, and melty cheese in a warm tortilla, offering a portable, protein-packed meal perfect for busy mornings or on-the-go fuel.

Ingredients
  

  • 1 cup scrambled eggs
  • 1/2 cup cooked sausage (such as chorizo or breakfast sausage)
  • 1/2 cup shredded cheese (such as cheddar or Monterey Jack)
  • 1/2 cup canned black beans, drained and rinsed
  • 1/4 cup diced bell pepper
  • 1/4 cup diced onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4-6 tortillas (such as flour or whole wheat)

Instructions
 

  • In a large bowl, scramble the eggs and set aside.
  • In a large skillet, cook the sausage over medium-high heat, breaking it up with a spoon as it cooks.
  • Once the sausage is cooked, add the diced bell pepper and onion to the skillet and cook until they are tender.
  • Stir in the black beans, scrambled eggs, and shredded cheese.
  • Cook for an additional 2-3 minutes, until the cheese is melted and the mixture is heated through.
  • Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  • Assemble the breakfast wraps by spooning the egg and sausage mixture onto the center of a tortilla, and topping with cilantro and a sprinkle of cheese.
  • Fold the bottom half of the tortilla up over the filling, then fold in the sides and roll the wrap up tightly
  • Serve the breakfast wraps hot and enjoy
