Ingredients
  

  • 2 pounds boneless, skinless chicken breasts
  • 1/4 cup brown sugar
  • 1/4 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons grated ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup cherry tomatoes, halved (optional)

Instructions
 

  • Season the chicken: In a small bowl, mix together the brown sugar, pineapple juice, soy sauce, honey, grated ginger, garlic, sesame oil, black pepper, and salt. Rub the mixture all over the chicken breasts.
  • Place the chicken in the crockpot: Place the chicken breasts in the crockpot and pour the pineapple chunks and cherry tomatoes (if using) on top.
  • Cook the chicken: Cook the chicken on low for 6-8 hours or on high for 3-4 hours.
  • Shred the chicken: After 6-8 hours, remove the chicken from the crockpot and shred it with two forks. Return the shredded chicken to the crockpot and stir to combine with the sauce.
